Breakfast (or whenever) Burrito

Hi friends!

I am a HUGE fan of all things burrito… So I am excited to share this recipe with you! I was so obsessed… I had it two days in a row for brunch this weekend and it was delish!!

Ingredients:
Makes 3 Burritos

1 Tbsp olive oil or coconut oil
1/2 small onion, chopped
1 medium sweet potato, diced small
1/4 tsp paprika
1/4 tsp cumin
1/4 tsp of chilli powder
1 can of black beans
1 cup of rice, cooked
1 cup of romaine (or greens of choice), chopped
large tortillas of choice
salt
pepper

For the Guacomole:
1 large avocado
half of a lime, juiced
1/4-1/2 jalepeno pepper, diced small (without seeds and depends how much spice you like)
salt to taste

For the Pico De Gallo:
2 roma tomatoes, small diced
1/2 lime, juiced
1 heaping Tbsp of red onion, small dice
cilantro, diced
1/4 jalepeno, small diced (without seeds)
salt to taste
splash of olive oil


Optional:
Salsa of choice or homemade Pico De Gallo
Cilantro to garnish the inside and top of burrito
Hot sauce of choice

1) If you need to cook rice, get a pot of rice on- follow directions of the rice you are using. You will need one cup of cooked rice. (I like to make more when I am making rice that way I can save it for the next couple days)
2) Add the onions to a sauce pan on medium heat with the oil. Cook the onions until translucent and add the sweet potato. Top with a lid and stir periodically while cooking for a few minutes until the sweet potato gets soft.
3) Start to make the guacomole by adding all of the guacomole ingredients to a bowl and mashing into a guac.
4) If you are going to make the home made pico de gallo make that now by adding all ingredients to a bowl and mixing.
5) To the sweet potato and onion, add the paprika, cumin, chili powder, and salt + pepper to taste. Stir well and cook the spices for 30 seconds.
6) Add the rinsed black beans to the pan and then add the cup of rice to the pan. Stir well.
7) Toast your tortilla in a toaster oven, in the oven, or on a frying pan. ( I throw mine right in the oven at 300F directly on the rack- for 2 minutes)

Once your tortilla is toasted, place it on a plate and layer with romaine lettuce, guacomole, bean and rice mixture, cilantro, salsa and hot sauce of choice.

How to roll your burrito:
1) Add the filling to the bottom half of the tortilla.
2) Fold over until ingredients are covered.
3) Fold in each side.
4) Roll up and serve.

Cut in half and you are ready to eat! Enjoy!!
