Tempeh Sandwhich

A friend dropped off a fresh homemade sourdough loaf at our doorstep this morning. So grateful for this amazing friend AND of course, their amazing bread making abilities! When we have bread on hand, tempeh sandwiches are a MUST! This takes maybe 10 minutes to make and also makes a perfect snack to take to school or lunch.

Ingredients:
Servings: 2

4 slices of bread of choice
1 tbsp olive or coconut oil
8 oz tempeh, sliced in squares
1/4 red onion, sliced
4 leaves of romaine, cut in half
2 pickles
1/2-1 avocado
veganaise
hot sauce of choice (my all time favourite is organic harvest)
1/4 tsp paprika
salt
pepper

Directions:

1) Heat a frying pan to medium heat, add oil and onions. Cook the onions for a minute and then add the tempeh to the same pan. Have the tempeh cut in squares if it comes in the package as blocks. I know some come as strips so that works too. If you find the tempeh really thick, cut it lengthwise as well so it is not too thick.
2) Add paprika, salt and pepper to the tempeh. Cook tempeh until golden brown.
3) If you like your bread toasted do so, I did not toast mine because the bread was so fresh!
4) Toast each side or bread with a thin layer of veganaise and hotsauce. Layer with avocado, pickles and lettuce. *Always an option to add tomato. Then add the cooked red onion and the tempeh. Cut in half and enjoy!!
