The Holy "Kinda" Mole Sauce

Alright, this is my FAV sauce I think of all time. I have eaten a ridiculous amount of burritos and tacos this past month and I am not mad about it! Tacos, burritos and bowls give me life! And this sauce ELEVATES all of these. I love mixing it with tofu and then popping it in a burrito, pouring it on top of a taco or mixing it with pinto or black beans and adding it to a rice bowl with guac and lettuce. Whatever you choose to do with this sauce I know you are going to love it!

Ingredients:
1 Tbsp olive oil
4 roma tomatoes, roughly diced
1/2 large onion, diced
3 cloves of garlic, chopped
1 dried chipotle chili soaked in hot water (each chili varies spice level- some can be really hot and some not so hot so maybe start with half the dried chili and go from there!)
1 Tbsp of maple syrup
1 heaping Tbsp of tahini
1 Tbsp of cacao powder
1 tsp of cinnamon
salt to taste

Directions:
1) It doesn’t matter how you chop things because it will all be blended in the end. Add oil to a sauce pan over medium heat, add onion and cook till translucent. Add garlic and cook for another minute or so. Add tomato and salt. Cook until soft and then add cacao powder and cinnamon.
2) Add this to a blender. Add the tahini and maple syrup and blend.
3) Voila, you’ve got a delicious VERY easy and quick kinda mole sauce!
